Wine Review: This Cab from 1995 is showing wonderfully right now. It says a lot about Tom Eddy and his skills as a winemaker. The beauty opens with a fragrant mild menthol and black cherry bouquet with a hint of oak. On the palate, this wine is full bodied, balanced, and smooth. The flavor profile is a delicious mild oak and black cherry blend. Right from the first sip you can tell this is a special wine. Bordeaux fans would love it. The finish is dry and its mild tannins drift away nicely. We loved this wine and it went perfectly with our flank steak at the Boston Wine Festival. Enjoy - Ken
Winemaker Notes: The Cab warms the mouth and tickles the nostrils with a rich, powerful black cherry and mild tobacco character. There is plenty of well-structured tannin to make the wine firm at the front and meaty at the back of the tongue. The tannin is refined however, not bitter, and allows the wine to linger slowly. The flavors continue to change and change as the last of the wine rolls down the throat. Several moments after swallowing, the wine sensation alters again. The flavors that are left are almost sweet with richness and fruitiness. The acid blends well with the tannin and alcohol and gives a ripe fruit impression in the finish. The '95 is a bold wine, capable of a long life, but is beginning to emerge now with exciting fruit. The Tom Eddy 1995 Napa Cab is expected to age for 15-20 years. Although one of the "fruitier" vintages, the season gave us wonderful tannin for long aging potential.
