Wine Review: This dark ruby colored red blend from Tikal is fantastic. It opens with a fragrant black raspberry and blackberry bouquet. On the palate, this wine is full bodied, balanced and rich. The flavor profile is a delicious extracted blackberry with notes of integrated oak and mild minerality. I also detected hints of boysenberry, Lindt 85% cocoa and black olive towards the end. The finish is dry and moderate tannins are sticky and linger for quite some time. This wine would pair perfectly with beef bourguignon. Enjoy - Ken
Winemaker Notes: This is the Asado wine you have been searching for! Deep black currant and oak aromas with opaque red/purple color. Flavors of black cherry liqueur, red currants, and a touch of black tea. Lush without seeming heavy, the wine seems to unfold in layers, keeping the palate excited well past the lengthy finish. Plenty of tannin for aging without any harsh astringency. This Cabernet lover's dream pairs well with most fine food presentations like duck in a fruit sauce, leg of lamb, Osso Buco, and even a simple filet mignon.
