Wine Review: This very dark ruby colored Cabernet Sauvignon from Terra Valentine opens with a red currant and red plum bouquet with hints of craisin and clove. On the palate, this wine is full bodied with notes of plus acidity. The mouthfeel is balanced, round and bright. The flavor profile is a red currant and red plum blend with notes of stony minerality and oak. I also detected hints of earthly loam. The finish is dry and its mountain tannins build-up and stick around for quite some time. This Cab would pair well with a Colorado rack of lamb. Enjoy - Ken
