Wine Review: This translucent deep purple colored Cabernet Franc from Spring Mountain opens with a black currant and violet bouquet with hints of bramble berries and faint saddle leather. On the palate, this wine is medium bodied with integrated fresh acidity. The mouthfeel is balanced, round and nicely coats your mouth. The flavor profile is a tasty black currant and mild graphite blend with notes of blackberry and oak. We also detected hints blueberry and green tea as it fades away. The tannins are dry, and its fruit flavors, acidity and moderate sticky tannins are nicely sustained. We would certainly suggest that you decant this youthful mountain-based Cab Franc for at least an hour before serving it with a New York strip steak with a creamy green peppercorn pan sauce.
