Wine Review: This midnight blue colored Cabernet Sauvignon from Spring Mountain opens with a musty oak and cranberry bouquet with a hint of blueberry. On the palate, this wine is medium bodied, slight acidic and juicy. The flavor profile is a black plum and oak blend with notes of mild black raspberry, craisin and mild minerality throughout. The finish is dry and its dusty tannins stick around for quite a while. This Cab needs some aeration and a fatty meal. I would decant it and serve it with pot roast. Enjoy – Ken
