Wine Review: This dark ruby colored Cabernet Sauvignon opens with a black currant and wild strawberry bouquet with hints of craisin. On the palate, this wine is full bodied with medium acidity. The mouthfeel is balanced, smooth and very savory. The flavor profile is an oolong tea and mild black currant blend with notes of red plum, gentle cedar, and stony minerality. I also detected hints of craisin and black cherry. The finish is dry, and its dusty tannins stick around for a very long time. I would pair this Cab with Gordon Ramsay's steak frites recipe.
