Wine Review: This very dark ruby colored Cabernet Sauvignon opens with a green olive bouquet with notes of blackberry, black currant and oak. On the palate, this wine is full bodied, balanced, mouthcoating and very smooth. The flavor profile is a blend of black currant, espresso, and oak. We also detected notes of black olive, grainy minerality and a hint of dark chocolate mixed in. The finish is dry and its flavors and tingly tannins drift away nicely. The Panel suggested pairing this Cab with steak au poivre. Enjoy - KWGTP
Winemaker Notes: This wine is truly a representation of the Sullivan Estate. Our 2016 Cabernet Sauvignon is immediately identifiable by hints of dark chocolate and leather laced with black pepper and mint. There is an intriguing floral character that melds with flavors of dried black cherry and plum. The typical savory Rutherford Dust is present—a perfect point between power and elegance. A balance between acids and tannins provides length beyond the initial sip.
