Wine Review: This pitch black colored Cab is true mountain fruit. It opens with an attractive mild black cherry bouquet. On the palate, this wine is medium bodied, balanced, and elegant. The flavor profile is a rich but dusty black cherry with notes of black licorice. The finish is very dry and its huge tannins are puckery and they stick with you for quite sometime. Cellar this very big red quite for a while. However, if you can’t resist, you could pair it with a big juicy pot roast to cut through the tannins. Cheers - Ken
Winemaker Notes: "Christopher's Cabernet Sauvignon comes from block 82, which at 2,400 feet, is the highest elevation block on the estate. Its meager, rocky soils coupled with maritime breezes, ample sunshine, and the inversions layer’s magic touch result in a complex spice profile (juniper, star anise) and savory plum/boysenberry fruit wrapped in dark chocolate flavors.
