Wine Review: This very dark ruby colored Cabernet Sauvignon from Sterling is very good and shows nice finesse. It opens with a cassis and espresso bouquet with hints of smoky oak and black cherry. On the palate, this wine is full bodied, balanced and has a smooth and round mouthfeel. The flavor profile is a dark chocolate and mild plum blend with notes of cassis, minerality, oak and cherry. I also detected hints of clove towards the end. The finish is dry and its flavors and refined tannins fade away nicely. This Cab would pair very nicely with a filet mignon in the near term. Winemaker Notes: In this vintage the wine is showing more red fruits than previous vintages, with slightly sweeter vanilla tones from the American oak. Tannins are well developed, framing a wine with great structure and balance. Classic Napa Cabernet notes of mocha and cassis join Bing cherry accented with pepper and oak spice, caramel toffee and layered flavors that leave a lasting, subtly sweet impression.
