Wine Review: This opaque purple colored Cab opens with a sour black cherry bouquet with a hint of black licorice. On the palate, this wine is full bodied, smooth as silk, and elegant. The flavor profile is a fruit forward mild sour black cherry and jammy black currant blend with notes of coffee. It also has a dash of black pepper, a hint nutmeg, and aome old oak which add to its complexity. The finish is quite dry and its building tannins are still prominent and linger for quite some time. I would suggest pairing this wine with slow cooked beef brisket. Enjoy – Ken
Winemaker Notes: The 2005 Star Lane Astral Cabernet Sauvignon shows immense concentration, with huge, lush tannins that frame tightly layered cassis, blackberry, plum, coffee, chocolate, spice, vanilla and smoke flavors. Sporting a suppleness that belies its youth, the wine is drinking beautifully now. But we suspect it will offer collectors many years of pleasure to come.
