Wine Review: This opaque and very purple colored Cabernet from Spring Mountain opens with fragrant boysenberry and blueberry bouquet. On the palate, this wine is full bodied, balanced, and smooth. The flavor profile is a cedar influenced black currant with notes of black cherry and cranberry. The finish is dry and its moderate tannins are managed and controlled. This very nice Cabernet would pair well with a New York strip steak. Enjoy - Ken
Winemaker Notes: Potent aromas of sweet dark fruit, cocoa, caramel and intriguing notes of violets introduce the wine. On the palate, the wine is structured and complex, the mid-palate laden with intense fruit – blackberry, cherry and cassis – and further enhanced by notes of chocolate and baking spices. The finish is long and lingering, with a re-statement of concentrated fruit and spice. In its youth, decant 1 to 2 hours before service. Drink 2012 to 2025.
