Wine Review: This pitch-black colored Cabernet Sauvignon from Spottswoode is very good. It opens with an oak, vanilla and black cherry bouquet with a hint of black currant. On the palate, this wine is full bodied, smooth and displays a little elevated acidity. The flavor profile is a mineral influenced black tea with notes of black currant and oak. The Panel also detected some hints of chocolate and black cherry. The finish is dry and has moderate sticky tannins. The Panel suggested pairing this Cab with a pan-seared flat iron steak. Winemaker Notes: Raw, dynamic, and so expressive! This wine is glowing with personality, vivacity, and youthful exuberance. The palate has a rustic charm and sense of umami carefully balanced with notes of blueberry, blackberry, and resinous pine forest. Beautifully expressive now, the 2016 Estate Cabernet is a wine that will only improve with time in the cellar to integrate and mature into its full epic potential.
