Wine Review: This deep purple colored Cabernet Sauvignon opens with an inviting black cherry and blueberry bouquet with hints of bay leaf and cassis. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is round and lush. The flavor profile is a black cherry and graphite blend with notes of oak and milk chocolate. We also detected hints of chalk, blueberry, black tea, and cured meats. The finish is dry, and its robust dusty tannins build-up stick around for quite a while. The Panel would decant this Cab and serve with Roy’s rib roast, short ribs, or a porterhouse steak.
