Wine Review: Oregon has long been a favorite region of mine, and should be of no surprise that the other Burgundy is producing some high-class sparkling wines. Evolution is Sokol Blosser's introductory line that is meant to be fun and inviting, and this is exactly what this wine is, except for the price. This sparkler does show some depth by featuring finer and deeper flavors together. Pears and Macintosh apples are surrounded by ripe peaches and ginger, all of which burst on the palate from medium sized bubbles. The acidity anchors this wine reminding you where it is from. Winemaker Notes: Evolution Brut Sparkling starts with aromatics of apricot, green apple, Bosc pear, with hints of white peach and citrus. The mouth feel is slightly creamy from the secondary fermentation in the bottle, with a light flintiness. Dry on the palate, it finishes crisp and clean.
