Wine Review: This dark ruby colored Pinot Noir opens with a mild black raspberry and mushroom bouquet with hints of cranberry and spice. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, round and fresh. The flavor profile is a red plum and red licorice blend with notes of stony minerality, clove, and black pepper. I also detected hints of cedar and black cherry. The finish is dry, and its flavors, fresh acidity and mild tannins are nicely extended. This Pinot benefits from some aeration as its fruit flavors get more expressive with some air. Once it opens up, I would pair this wine with a grilled salmon with mushrooms and a cherry pinot noir sauce. Enjoy - Ken
