Wine Review: This young South African Cabernet Sauvignon is a translucent medium purple in the glass and has a bouquet of blackberry, tomato leaf, graphite and cedar. It has a medium+ body and medium acidity and is dry. It could perhaps benefit from some additional time in the bottle to come together. It displays interesting flavors of red plum, black currant, black pepper, dark chocolate and integrated minerality. There is also a touch of oak and lingering fruit in the finish, with some nice drying gentle tannins. Pair this bottle of Cab with some braised short ribs. - Mark
Winemaker Notes: The wine displays a dense opaque color. A beautiful expression of ripe black berry fruit with hints of violets. With aeration, the aromas evolve and notes of blueberry coats the nose with perfume aromas of dried fynbos and traces of aniseed. The tannins are well integrated. On the finish the tannins create a dryness, while the Cabernet Sauvignon fruit expose a sweetness that lingers on the palate. Serve with deboned lamb rib with burned cauliflower and jus.
