Wine Review: This very dark ruby colored Cabernet Sauvignon opens a with flinty mild plum bouquet. On the palate, this wine is medium bodied, slightly acidic and juicy. The flavor profile is a tasty ripe black currant with nicely integrated minerality with notes of mild plum and blueberry. The finish is dry and its flavors and dusty oaky tannins are nicely extended. This Cab is food friendly and would pair well with steak tips. Enjoy - Ken
Winemaker Notes: Opaque, deep red with a vibrant ruby edge, with the scents of cassis, red plum, cherry, tobacco, cedar, vanilla, green peppercorn spice and smoky mineral notes. Wafts of lavender, hints of sweet herbs. Lifted aromatics, inviting, fresh and intriguing! Ever evolving and revealing nuances. Flavors of vibrant red berries, cassis, blackberry and plum, structured and elegant with balanced acidity. Fresh fruit on the entry with a focused mid-palate. Toasty, sweet oak, tarragon and white pepper frame the fruit and lend structure. Youthful and slow to reveal itself. This wine finishes strong with supple tannins and bittersweet cocoa. The acid balance makes this wine very food friendly and age worthy.
