Wine Review: This slightly opaque and deep ruby colored Cabernet Sauvignon opens with kirsch and mild old leather bouquet with hints of pipe tobacco, boysenberry, and charcoal dust. On the palate, this wine is full bodied with medium acidity. The mouthfeel round and savory. The flavor profile is complex blend of Morello cherry and menthol with notes of cedar. We also detected hints of molasses, thyme, blackberry, and espresso mixed in. The finish is rather dry, and its moderate tannins linger for quite a while. The Panel would pair this Cab with duck confit or braised short ribs. Enjoy – KWGTP
Winemaker Notes: Deep ruby red and soft velvet colors are paired with aromas of plum, black cherry, vanilla, and baking spices. This is a rich, soft, and elegant wine with flavors of plum, boysenberry, stewed fruit, and cocoa. The fruit compote flavors linger and engulf the mid-palate. Soft, lush tannins grip and then release gracefully on the finish. Pair with red meats or enjoy with light cheese to really savor the flavors of the wine.
