Wine Review: This opaque and very dark purple colored Cabernet from Shafer is consistently a high quality wine each and every year. The 2008 opens with a black currant bouquet with a hint of pine. On the palate, this wine is full bodied, very well balanced, and ultra-smooth. The flavor profile is a very tasty black cherry with notes of plum, chocolate and a hint of old oak. The finish is dry and its dusty tannins last for a very long time. The panel really enjoyed this Cab and would suggest pairing it with a ribeye steak or a rack of lamb seasoned with rosemary. Winemaker Notes: Perfumy aromatic elegance leads to rich, focused flavors of blackberry, black cherry, dark chocolate, cola, cassis, juicy black and red cherry, black tea, with spice and warm toast.
