Wine Review: This very dark ruby colored Cabernet Sauvignon from Washington State did well with the Panel. It opens with a cranberry and plum bouquet with hints of juniper and wet clay. On the palate, this wine is full bodied, balanced and savory. The flavor profile is a black currant, oak and chalky minerality blend with notes of black cherry. The finish is dry and its moderate tannins stick around for quite a while and build up. The Panel felt this Cab was young and could benefit from some more cellar aging. In the near term, they would decant it and serve it with a bourbon steak tips or pan roasted duck breast. Enjoy - KWGTP
Winemaker Notes: This old vine Cabernet has a dark garnet gem color and a generous nose of black currant, cherry, spice, desert herb and white pepper. The palate is plush and mouth filling, yet framed with silky, fine-grained tannins and lifting acidity. It has flavors of black cherry, cassis, coffee bean, herb, tobacco leaf and spice. This wine will improve significantly with cellaring over the first five years and will hold nicely and continue to develop for ten or more years from vintage.
