Wine Review: This very dark ruby colored Cabernet Sauvignon from Sequoia Grove opens with a black currant, menthol, and blackberry bouquet with hints of coffee beans and oak. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is nicely balanced, polished, round and fresh. The flavor profile is mild black currant and cola blend with notes of black tea and black plum. We also detected hints of crushed rock minerality and oak. The finish is dry, and its flavors, acidity, and dusty tannins stick around for a very long time. The Tasting Panel would decant this Cab before pairing it with ribeye or braised short ribs.
