Wine Review: This opaque and very dark purple colored Cabernet Sauvignon opens with a black cherry and dried coconut bouquet with hints of muddled mint and cassis. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is balanced and round. The flavor profile is a black cherry and oak blend with notes of cassis and Fig Newtons. I also detected some hints of oolong tea, stewed black plum and Ghirardelli 92% intense dark chocolate. The finish is dry, and its dusty tannins, acidity and flavors are nicely extended. This Cab would pair well with a grilled hanger steak. Enjoy - Ken
Winemaker Notes: This Cabernet Sauvignon opens with notes of blackberry cobbler, plum, and black currant, followed by warm aromatics of fresh tobacco, tamarind, hints of vanilla, and caramelized black fruit. On the palate, this Cabernet is silky and lively, with medium-to-full bodied texture and weight, and flavors of raspberry, black cherry, black plum, and soft red and black stone fruit. Rich tannin, texture, and weight lead to an inviting mouthfeel. The finish is mouthwatering and lengthy with cherry and hints of dark, powdery cocoa, classic in Rutherford-based wines.
