Wine Review: This midnight purple colored Cabernet Sauvignon from Sequoia Grove opens with a black currant, black cherry, and black licorice bouquet with hints of sarsaparilla, blueberry, and oak. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, and suave. The flavor profile is and black currant and black cherry blend with notes of graphite and dark chocolate. We also detected hints of menthol, espresso, blackberry, and cedar. The finish is dry and its dusty tannins build-up and last for a very long time. The Tasting Panel would pair this Cab with a well-marbled ribeye or with a crispy roast duck with an orange sauce. Winemaker Notes: Dark red in color, this wine bursts with aromas of wild berry, mixed berry pie, and cordial aromas, giving way to raisin cake and brown sugar syrup. The palate flows with flavors of cherry and blackberry patch and finishes with a balance of acidity and tannin. The tannins are soft with additional flavors of fruit, leather, white pepper, cedar, roasted mushroom, and truffles.
