Wine Review: This slightly opaque and deep ruby colored Cabernet Sauvignon from Schweiger opens with a fragrant cinnamon and black cherry bouquet with hints of cigar box. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced, round, clean and a little restrained. The flavor profile is a cedar and graphite blend with notes of black plum, black currant, and licorice. We also detected some hints of black tea and boysenberry in the mix. The finish is dry, and its grippy tannins build up and last for a long time. The Tasting Panel would suggest decanting this Cab before pairing it with a ribeye or grilled short ribs. Enjoy – KWGTP
Winemaker Notes: This is our twenty-fourth bottling of Cabernet Sauvignon. Every year showcases more maturity and evolution in both our vineyards and winemaking. Bright aromas of dark cherry, raspberry, blackberry, currants, and boysenberry preserves with a slight hint of nutmeg greet you in the glass. The velvety entry with sweet oak envelops the richly layered fruit. Juicy acidity and lingering berry notes mesh with complex tannins at the finish. Our 2017 Cabernet Sauvignon pairs well with food like grilled steak topped with a gorgonzola sauce or a flame-broiled cheeseburger on a brioche bun.
