Wine Review: This hay-colored Blanc de Noirs from Schramsberg opens with lots of random very tiny bubbles. The bouquet displays fresh pizza dough and chamomile tea aromas. On the palate, this wine is light plus bodied with integrated plus acidity. The mouthfeel is nicely balanced, smooth, and elegant. The flavor profile is a lemon verbena and lime blend with notes of chalky minerality and maraschino cherry. I also detected some hints of pineapple and ginger. The finish is dry, and its flavors and refined acidity drift away nicely. The Tasting Panel would pair this Sparkler with a chilled crab cocktail. Enjoy – Ken
