Wine Review: This golden straw and faint coral colored Sparkling Wine from Schramsberg opens with lots of random tiny bubbles. The bouquet features lime zest and fresh bread dough aromas with hints of jasmine and peach skin. On the palate, this wine is light bodied with plus acidity. The mouthfeel is very well balanced, delicate, and refined. The flavor profile is a tasty lemon-lime blend with notes of light bread dough and green tea. I also detected some hints of chalky minerality, honeydew melon and a touch of grapefruit. The finish is dry, and its flavors and acidity linger for a while before drifting away. This Sparkler would pair well with all scallop appetizers. Enjoy - Ken
