Wine Review: This straw-colored Sparkling wine from Schramsberg displays tons of small bead bubbles. It opens with a lemon and golden delicious apple bouquet with hints of yellow grapefruit, bread dough, and plump golden raisins. On the palate, this wine is medium bodied with nicely integrated medium acidity. The flavor profile is a refined chalky mineral influenced lemon verbena with notes of biscotti and marzipan. I also detected some hints saline and orange zest towards the end. The finish is dry, and its flavors and acidity linger nicely. This Sparkler would pair quite nicely with swordfish skewers. Winemaker Notes: The 2018 Blanc de Noirs has generous aromas of peach, apple, nectarine, and candied lemon. Its fresh nose is complemented by notes of white cranberry, tangerine, guava, jasmine, and honey suckle. The palate opens with flavors of juicy white peach, pear, clementine, and lime sherbet, with delicate touches of ginger, sugar cookie and vanilla custard. Its bright acidity leads to a long, clean finish. Schramsberg Blanc de Noirs is particularly well-suited to serve with a variety of foods, including soft and nutty cheeses, macadamia nut-crusted halibut, and pork tenderloin with fresh rosemary and lemon thyme.
