Wine Review: This pale straw-colored "Blanc de Blanc" opens with tons of small and medium bubbles. The bouquet features lemon, almond, green apple and buttery croissant. On the palate, this wine is medium bodied and frothy, with plus acidity. However, at the same time it is round with a creamy mouthfeel. The flavor profile is a chalky mineral influenced green apple and lemon curd blend with notes of bread dough. We also detected hints of toasted almond, golden raisin and white pepper. The finish is pleasant, dry and very refreshing. This Sparkler would pair nicely with broiled sea scallops drizzled with a lemon butter sauce or a classic cheese soufflé. Enjoy – Ken & Mark
Winemaker Notes: The 2017 Blanc de Blancs has bright aromas of Meyer lemon, golden apple, Bosc pear, marzipan and vanilla cookie, which intermingle with hints of warm pastry and cinnamon. Granny Smith apple, candied lemon, and baked pineapple bring fruit-ful notes to the mid-palate, ending with a long, clean and vibrant finish.
