Wine Review: This pale straw-colored Blanc de Blanc open with lots of streaming tiny bubbles. The bouquet features a yeasty dough and some wet stone along with a hint of lime. On the palate, this wine is light bodied, balanced and soft. The flavor profile is a bread dough and mineral blend with notes of almond and tart lime. We also detected a hint of ginger. The finish is dry and lingers slightly. The Panel suggested pairing this sparkler with quiche Lorraine tart appetizers or baked Dover sole with homemade German spaetzle. Enjoy - KWGTP
Winemaker Notes: This 2016 Blanc de Blancs has bright aromas of ripe green apple, Bosc pear, sweet spice and buttered brioche, which intermingle with hints of fresh ginger, stone fruit and coriander. Honeycrisp apple, grilled lemon, and orange peel bring fruitful notes to the mid-palate, ending with a clean crisp acidity that's punctuated with caramelized and tropical flavors. While this wine can be enjoyed by itself as an aperitif, it is also perfect with fresh oysters and other shellfish, crab cakes, ceviche and grilled sea bass.
