Wine Review: This greyish and white gold colored Sparkling Wine from Schramsberg performed very well once again with our Tasting Panel. It opens with an inviting mild strawberry and toast bouquet with hints of apple. On the palate, this wine is medium bodied, balanced and effervescent. The flavor profile is a walnut, sourdough and mineral blend with notes of green apple. We also detected some hints of strawberry and lime mixed in. The finish is dry and its flavors linger for a while. The Panel suggested pairing this very nice sparkler with a fresh sliced salmon on a toasted baguette or with a pork roast with a peach glaze. Winemaker Notes: This Blanc de Noirs expresses generous aromas of red apple, apricot, and candied lemon, which gradually layer with fragrances of graham cracker and sourdough bread. Lush flavors coat the palate with cantaloupe, peach, and an added hint of vanilla and marzipan. The crisp acidity gives way to a floral, honeyed finish.
