Wine Review: This light yellow colored sparkler was ones of the top wines we covered in this year's big blind tasting. It opens with a mild lemon bouquet with a hint of cinnamon. On the palate, this wine is medium bodied, balanced and rich. The flavor profile is green apple with notes of minerality and a hint of lime. The finish is rather dry and its flavors linger for quite some time. The panel suggested pairing this gem with coquilles St. Jacques or stuffed mushrooms. Enjoy - KWGTP
Winemaker Notes: Fruitful aromas of fresh lime and Granny Smith apple, accentuated by nuances of juicy pineapple and lemon grass, are complimented by notes of honeycomb and hazelnut from the years of aging en tirage. On the palate, the 2008 Blanc de Blancs enters crisp and tangy, unfolding with flavors of lime, pineapple and exotic tropical fruits. Delicious and layered flavors of lemon custard and fresh-from-the-oven brioche follows. The palate finishes with a delicate sweetness and a generous acidity that is long and quenching.
