Wine Review: This enjoyable, pale golden yellow colored sparkler is a blend of Chardonnay and Pinot Noir and shows multiple streams of small persistent bubbles. Raspberry, Honeycrisp apple, croissant, mango, and sea breeze are displayed in the bouquet. Plenty of froth on the palate. It is medium bodied with medium-plus acidity. The mouthfeel is balanced, crisp, dry and polished. I found flavors of Honeycrisp apple, ginger ale, tangerine, and crushed stone along with notes of toasted almond and raspberry. The finish is dry and long finish. Serve with fried scallops. - Mark
Winemaker Notes: After approximately two years on the lees, there are notes of freshly baked bread and pastry that enhance the more fruit forward style of the wine. Finally, after several months on the cork, the wine develops additional complexity, featuring essences of caramel and hazelnut.
