Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Rombauer is very good. It opens with fragrant and attractive blueberry bouquet. On the palate, this wine is full bodied, balanced, smooth and savory. The flavor profile is a tasty blueberry with notes of nicely integrated minerality and gentle oak. I also detected hints of blackberry and black pepper. The finish is dry and its moderate tannins stick around for quite a while. This Cab would be a perfect match for beef bourguignon. Enjoy – Ken
Winemaker Notes: This wine displays a bright crimson hue and enticing aromas of black currant, blueberry and cedar spice. The palate is rich and textured with flavors of sweet cassis, blackberry and black cherry carried by supple tannins through the long finish. Enjoy now through 2018. Our favorite Joy of Cooking pairings for this wine include grilled steak topped with mushroom ragout or osso buco with risotto Milanese.
