Wine Review: This medium ruby colored Cabernet Sauvignon from the “To Kalon Vineyard” opens with black cherry-cola and black currant bouquet with hints of graphite, black pepper and espresso. On the palate, this wine is full bodied, well-balanced, silky and graceful. The flavor profile is a tasty mild dusty mineral influenced black currant and oak blend with notes of blueberry and cola. We also detected hints of espresso and clove mixed in. The finish is dry and its refined tannins built-up and kept going for a very long time. The Panel suggested pairing this impressive Cab with Roy’s rib roast or a filet mignon w/bearnaise sauce. Enjoy – KWGTP
