Wine Review: This pitch-black colored Cabernet Sauvignon from Robert Foley opens with a dark chocolate and black currant bouquet with hints of violets, and black cherry. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, concentrated and rich. The flavor profile is stewed black plum and graphite blend with notes of mild menthol and cedar. We also detected hints of red currant, mocha, and toasted oak. The finish is dry, its flavors, acidity, mild tannins linger last for quite a while. The Tasting Panel would pair this Cab with a grilled butterflied leg of lamb or beef wellington. Enjoy - KWGTP
Winemaker Notes: This super-dark Cabernet Sauvignon is 100% varietal in composition and combines the round softness of lower elevation Cabernet with the structure and forest-born spiciness of the mountain fruit – a perfect fit. Red and black cherries and fruit open in the aroma. The flavors seem to explode across the palate, which are lifted by the natural mountain fruit acidity. These characters dance across the palate where tannins gently tantalize the middle yet leave no angularity in the long, seemingly sculpted finish.
