Wine Review: This pale yellow colored dry Riesling from the Finger Lakes was our consensus #2 wine in a recent mini tasting that I conducted. It opens with a faint wet stone like bouquet. On the palate, this wine is light bodied, tangy, and slightly tart. The flavor profile is mineral infused with key lime and a hint of green apple in the background. The finish is dry and lingers slightly. The group thought this wine would pair well with a roasted chicken dish with a banana mole sauce. Enjoy – Ken
Winemaker Notes: The Ravines Dry Riesling defines a new style of Finger Lakes Riesling, distinct from older, sweeter styles. Using traditional winemaking techniques and careful fruit handling, we produce a medium bodied Riesling, perfectly suited for food pairings. With its mouth watering acidity and pronounced mineral notes, the dominant aromas of green apple, pear and white peach, accompanied by honey and floral notes, provide a lively wine with uncommon aromatic intensity and purity. The firm acidic backbone provides the focus as the aromas linger for an exceptional length of time. While this wine will warrant cellaring to experience more evolved aromas, it is very enjoyable already.
