Wine Review: This ruby colored Cab Franc from the Finger Lakes opens with a mild mulberry bouquet with a hint of red pepper. On the palate, this wine is medium bodied, balanced, very approachable, and easy to drink. The flavor profile is a tasty mild black raspberry and red pepper with a dash of black pepper mixed in. The finish is dry and its mild tannins are slightly prolonged. This wine would pair well with pork tenderloin. Enjoy - Ken
Winemaker Notes: The 2007 Ravines Cabernet Franc shows the potential of this grape variety in a great vintage. This is one of our more extracted vintages with the Cabernet Franc showing a very deep color and a concentrated array of aromas. Impeccably balanced, this wine shows good acidity and soft tannins to accompany the rich palette of aromas. Together with the dominant varietal aromas of blackberry and plum, you find earthy elements, hints of pepper and cloves as well as violets. While young, this 2007 Cabernet Franc already shows its richness and potential for aging.
