Wine Review: This dark ruby colored Cabernet Sauvignon from Ramey opens with a musty earth and wet slate bouquet with hints of cedar, pomegranate and red cherry bouquet. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is mild strawberry and cherry blend with notes of mild minerality, chocolate and gentle oak. The finish is dry and its moderate tannins are smooth and fade away nicely. The panel suggested pairing this Cabernet with veal shanks or braised short ribs. Enjoy – KWGTP
Winemaker Notes: 2012 turned out to be a perfect vintage with clear sunny days and cool evenings. This produced a long, moderate growing season with extended hang time and even ripening, resulting in optimum tannin maturity and a deep range of flavors.
