Wine Review: This very dark ruby colored Cabernet Sauvignon from Rutherford opens with a mild black currant bouquet with a hint of dark chocolate. On the palate, this wine is medium bodied, nicely balanced, soft and smooth. The flavor profile is a tasty black cherry with notes of dark chocolate and blueberry. We also detected a hint of black currant mixed in. The finish is dry and its progressive well-managed tannins build-up and drift away nicely. The Panel suggested pairing this Cab with a New York strip steak or BBQ burnt ends brisket. Enjoy – KWGTP
Winemaker Notes: Our 2016 Rutherford Cabernet Sauvignon opens with aromas of blackberry, mulberry, boysenberry, and black currant. On the palate, there is a darker brooding brambly berry fruit supported by pleasing sweet baking spice notes of cinnamon, cedar and clove that surround the core of black currant, chocolate covered cherries and cassis. The depth of flavor culminates in a finish with earthier black tea, bittersweet chocolate, graphite and espresso notes.
