Wine Review: This inky pitch-black colored Cabernet Sauvignon from the Napa Valley requires a lot patience and is not for the faint of heart. It opens with a black licorice, black currant, and blackberry bouquet with hints of black pepper and oak. On the palate, this wine is full bodied with plus acidity. The mouthfeel is balanced and round. The flavor profile is a concentrated blackberry and black currant blend with notes of juicy black plum, rich oak, and black tea. I also detected hints of chewy black licorice, toasted coconut, and graphite. The finish is rather dry and its bold and dusty tannins stick around for a very long time. This wine needs good amount of time and air. I would decant it for an hour or so. While waiting listen to some Guns' n Roses "Patience", cut up some sharp cheese and grill a well-marbled ribeye. When that is done, your patience will be rewarded. Enjoy – Ken & Joe!
