Wine Review: This deep ruby colored Cabernet Sauvignon from PreVail opens with a mild blackberry and blueberry bouquet with hints of wet slate, mocha, cedar, and licorice. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, smooth, and bright. The flavor profile is juicy blackberry, black currant and stony minerality blend with notes of blueberry POM drink. We also detected hints of mocha, cedar, and Earl Grey tea. The finish is dry and medium tannins build-up and linger for a while. The Tasting Panel would decant this wine for quite some time because it really emerges with some aeration. Winemaker Notes: This wine is rich and intense with aromas of maple, boysenberry syrup, and graphite. On the palate, dark chocolate, blackberry, cedar, and baking spices carry through the long finish. Back Forty pairs well with roasted, broiled, or barbequed red meats such as lamb or beef.
