Wine Review: This deep ruby colored Cabernet Sauvignon based blend from Podere Sapaio opens with a cigar box and leather bouquet with hints of green olive, Dr. Pepper, and blueberry. On the palate, this wine is medium bodied with integrated medium plus acidity. The mouthfeel is balanced, round, and a bit racy. The flavor profile is a cedar influenced black cherry and stone dust blend with notes of black currant, cola, and dark chocolate. We also detected hints of white pepper and cinnamon tea. The finish is dry and is big dusty tannins and acidity stick around for a very long time. The Tasting Panel would decant this Italian red blend for a while before pairing it while an Italian briciole or with an antipasto platter. Enjoy - KWGTP
