Wine Review: This pitch black colored Cabernet Sauvignon from Plumpjack is terrific. It opens with a mild blueberry and blackberry bouquet. On the palate, this wine is full bodied, balanced, rich and concentrated. The flavor profile is a very tasty blackberry with notes of oak. I also detected hints of minerality, black currant, black licorice and blueberry. It has a lot going on. The finish is dry and its bold tannins are refined, yet lengthy. This wine is still very young and will develop and evolve even more as time rolls on. That said, even today this wine went perfectly with my Brandt beef ribeye with a mushroom ragout at Flank in Waltham. Enjoy - Ken
