Wine Review: This white gold colored Champagne from Piper-Heidsieck displays several streams of tiny and small bubbles. It opens with a French baguette and green apple bouquet with hints of ginger ale, lemon squares, linen, and nutmeg. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is round, clean, and frothy. The flavor profile is walnut and tart green apple skin blend with notes of oolong tea and mild fresh ginger. We also detected hints of honeycomb and bread dough. The finish is dry, and its flavors and acidity are extended. The Tasting Panel would pair this Brut Champagne with pan-seared scallops with mushroom risotto or caviar. Enjoy - KWGTP
Winemaker Notes: The Cuvée Brut takes us on a journey of almonds, fresh hazelnuts, and fruits from the orchard, like freshly cut apples and pears. The wine also offers a smoky quality, almost toasted, which gives the impression of savoring a bite of freshly baked bread, just out of the oven. It is a precise wine, extremely well balanced, which offers plenty of finesse on the palate. Pair with salmon tartare, snails, salmon sushi and tuna maki.
