Wine Review: This slightly opaque and dark ruby colored Cabernet Sauvignon from Pine Ridge was well-received by the Tasting Panel. It opens with a black currant, macerated cherry and leather bouquet. We also picked up a hint of licorice as well. On the palate, this wine is medium bodied, balanced, and elegant. The flavor profile is a very tasty black currant and black cherry blend with notes of blueberry, dark chocolate and graphite. There are also hints of oak throughout. The finish is dry and its fine tannins drift away nicely. The Panel suggested pairing this Cab with a filet mignon or a veal chop. Enjoy – KWGTP
Winemaker Notes: Pencil shavings, dark plum, coffee, hazelnut, Bing cherry, and cinnamon graham cracker aromas jump from the glass. The sweet, ripe entry reveals toasty oak and rich layered flavors mimicking the aromas. The fruit carries through to the finish, which is long, spicy, and brooding. This is an elegant wine to enjoy now or save and watch it develop further.
