Wine Review: This midnight blue colored Cabernet Sauvignon from Howell Mountain opens with a fragrant black raspberry bouquet with hints of iron shavings. On the palate, this wine is full bodied, balanced and rich for a 2011 Cab. The flavor profile is a rich mineral infused black currant with notes of black raspberry. I also detected hints of espresso and oak. The finish is dry and its moderate tannins are a bit sticky. This Cab benefits from aeration, so decant it for a bit to loosen up the fruit. It would pair nicely with comfort foods. I would pair it with beef bourguignon. Enjoy – Ken
