Wine Review: This Soave from Pieropan will stylistically appeal to fans of aged white wines. It is light yellow colored and opens with a bee’s wax, sour dough and honey bouquet. On the palate, this wine is medium to full bodied, balanced, rich and savory. The flavor profile is a honeyed pear with notes of almond, lime, green apple and a hint of lemon. The finish is dry and its flavors linger nicely. While this style is not for everyone, those who like it will love it. Winemaker Notes: Brilliant and intense yellow with golden hints; Reminiscent of exotic fruit and nuts on the nose; soft and persistent on the palate, with hints of spice, length and elegance. Makes an excellent partner to complex dishes, even with strong flavors particularly risottos and fish including salmon, scallops and crab.
