Wine Review: This slightly opaque and dark ruby colored Cabernet Sauvignon opens with black currant and black plum bouquet with hints of violets and eucalyptus. On the palate, this wine is medium plus bodied and smooth with medium plus acidity. The flavor profile is extracted black currant and graphite blend with notes of oak and chocolate. We also detected hints of fig and stewed plum towards the end. The finish is dry, and its dusty tannins stick around for quite a while. The Panel would pair this Cab with a skirt steak or beef satay. Winemaker Notes: Welcoming and luxurious, with aromas of milk chocolate, flambéed cherries, toasted almonds, warm croissants, black tar, strawberry candy, and hints of Christmas spice. On the palate, an ultra-rich and luxurious treat, with gobs of chocolate, uber silky velvety tannins, fresh cherry juice, blackberries, raspberries, walnuts, molasses, salted caramel, finishing deep and long, with flavors that seem to go on forever.
