Wine Review: This deep and inky ruby colored Cabernet Sauvignon from Phase V is awesome! It opens with a black currant and Maine blueberry bouquet with hints of vanilla, clove, mint, and oak. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, seamless, and rich. The flavor profile is a very tasty blueberry and cedar blend with notes of boysenberry, mint, and cherry. We also detected hints of Baker's chocolate and crushed stone. The finish is dry, and its tannins build-up and stick around for quite some time. The Tasting Panel enjoy this terrific Cab on its own! With food, we would pair it with Roy’s rib roast. Enjoy – KWGTP
Winemaker Notes: Provide an artist with multiple colors and they can do beautiful things! The 2018 Cabernet Sauvignon shows the pleasure of blending. The bouquet reveals a quiet power with blackberries, blueberries, and chocolate anchored by a beautiful rich earthiness. The palate is bold and balanced, lacing fruit with hints of black licorice, crushed gravel, and baking cocoa. The tannins have density and energy in thoughtful combination, revealing elements of the full range of fruit styles grown across our phenomenal collection of vineyards.
