Wine Review: This midnight purple colored Cabernet Sauvignon is Excellent and recently tied for 1st place in our blind tasting. It opens with a blackberry and blueberry bouquet with hints of pipe tobacco and nutmeg. On the palate, this wine full bodied, balanced, and rich. The flavor profile is a tasty black currant and blackberry blend with notes of black tea and dark chocolate. We also detected hints of oak and refined minerality. We noted there were lots of flavor layers in this Cab. The finish is dry and its dusty tannins stick around and are quite extended. The Panel suggested that you decant this wine and pair it with a well-marbled ribeye steak. Enjoy - KWGTP
Winemaker Notes: The 2016 Phase V Cabernet Sauvignon’s color is a dense, dark violet, displaying layers of blackberry, currants, and cassis on the nose. The palate explodes with luscious ripe black fruits, baking spice, and a kiss of French oak, concluding with a long lingering finish that makes you want more. The 2016 Phase V Cabernet Sauvignon has a skillful balance of firm tannins and bright acidity, making this wine ready to enjoy today or capable of aging over the next 10-15 years. - Philippe Melka, Winemaker
